In a large mixing bowl, combine the rolled oats, almond milk, chia seeds, Greek yogurt, honey (if using), cinnamon (if using), and vanilla extract (if using). Stir until well combined.

Divide the mixture evenly among thelass jars or containers. Cover the jars or containers tightly with lids.

Refrigerate the overnight oats for at least 4 hours, or overnight. This allows the oats to absorb the liquid and soften.

In the morning, top the overnight oats with fresh berries and chopped nuts, if desired. Enjoy!
